Have cook, will travel

While visiting family this weekend, I spent some time cooking. I started with pasta primavera for myself. No pictures there. Then lunch the next day, I made grilled cheese and tomato and forgot to take photos again.

Saturday night dinner, Mom and I made a pasta dish she has been excited to try. Pasta, fresh tomato, onion, garlic, basil, covered in vegetable stock which is cooked off. Then top with Parmesan. Add salt and pepper if you need to. The recipe called for red pepper for a little spice. I tossed some squash and zucchini in olive oil, salt and pepper and roasted. Then dinner was served!


Today, I made grilled cheese for iDad and I at lunch. Tomato, fresh cucumber, pickled veggies, and grapes on the side.


Dinner tonight was special. It is Evil Step Mother’s (ESM’s) 29th (aka 60th) birthday and her and iDad’s 20th anniversary. So I broke my vegetarianism for a night. Baked, bourbon-marinated salmon with roasted fingerling potatoes, local carrots, and asparagus.


For dessert, cheesecake bought at the grocery store. But, for my own touch, I had iDad mash fresh strawberries with a little sugar and then topped with strawberries and blueberries. Yum!


Back to the Bay Area tomorrow afternoon and cooking for myself. It was nice to share for a bit!
